Bryn is one of Britain’s best‑known Welsh chefs, first gaining public attention on Great British Menu when he cooked for the Queen’s 80th birthday banquet. After years in top London kitchens, he ran Odette’s in Primrose Hill before returning to Wales to build a group of restaurants including Bryn Williams at Porth Eirias in Colwyn Bay and The Touring Club in Penarth — both holders of Michelin Bib Gourmand awards for consistently outstanding yet good‑value cooking. In 2025 he launched a new venue at Theatr Clwyd, bringing his seasonal, produce‑focused style back to his home region. Bryn is also a familiar face on Saturday Kitchen and other UK food TV.
