Born in New York to an American father and French-Spanish mother, Victor has always had an international outlook. Moving to Barcelona when he was six years old, he started working in restaurant kitchens as a teenager. Throughout his career Victor has held a series of stages in two and three Michelin star restaurants in Spain, Los Angeles, Las Vegas and San Francisco. Victor made his name in London running Spanish restaurants, before launching SO|LA, which was awarded a star in the Michelin Guide for Great Britain and Ireland 2021. Victor and his team are returning to the pub after a stand-out Guest Chef night in 2024.
