Bryan is a veteran Welsh chef with nearly 50 years in professional kitchens. After establishing his reputation in London — including a long stint at Hilaire — he and his wife Susan ran Tyddyn Llan in North Wales for over two decades, where the restaurant held a Michelin star from 2010–2020 and built a reputation for classic, ingredient‑driven cooking. In 2024 the couple sold Tyddyn Llan and Bryan briefly retired, but in 2025 he returned to the stove for a 3-month residency at Covino in Chester, serving simple, seasonal dishes that reflect his decades of experience.
